Structural characteristics of dipalmitoylphosphatidylcholine and hydrolysates from sunflower protein isolate mixed monolayers spread at the air-water interface
Article Abstract:
The structural characteristics of hydrolysates form sunflower protein isolate (SPI) and dipalmitoylphosphatidylcholine (DPPC) mixed monolayer spread on the air-water interface are analyzed. DPPC monolayers present a structural polymorphism as a function of surface pressures while with SPI hydrolysate monolayers, two different structures can be distinguished and the structural characteristics of SPI and DPPC depend on the degree of hydrolysis and protein/DPPC ratio.

Penetration of [beta]-lactoglobulin into monoglyceride monolayers: Dynamics, interactions, and topography of mixed films
Article Abstract:
The penetration of [beta]-lactoglobulin into a monoglyceride monolayer spread at the air-water interface and its effects on the structural, dilatational and topographical characteristics of mixed films are analyzed. The results are found to have direct relevance for foam formation and stabilization and assuming the validity of extrapolating from the air-water interface to the oil-water interface, also for emulsions.

Article Abstract:
The results from study confirm that the structural and topographical characteristics, shear-induced segregation, and squeezing-out phenomena of mixed proteins and monoglycerides at the air/water interface observed with protein ([beta]-casein and [beta]-lactoglobulin) and monoglyceride (monopalmitin and monoolein) mixed films appear to be generic.
