The UK market for sugar and artificial sweeteners totalled 335 million pounds sterling in 1994. Sugar sales fell between 1990 and 1994 to 421,000 t, worth 280 million pounds sterling. The fall is mainly attributed to an increasing awareness of a healthy diet. The sugar market is dominated by white granulated with a 73% value share. The artificial sweeteners market was worth 55 million pounds sterling in 1994, with the sector led by tablets. Leading players in the sugar market are Tate & Lyle and British Sugar. The sugar and artificial sweeteners market is set to fall from 334 million pounds sterling in 1994 to 308 million pounds sterling by 1999.
