Schramsberg sets the pace

Schramsberg, one of the few California sparkling wine producers use oak barrels to ferment and age much of its base wine. Its annual production is a relatively modest 45,000 cases, which involves Blanc de Blancs as the winery's lead player that accounts for half of the production.
