Mild-tasting, sweet Vidalia onions from Georgia became more popular in the mid-1970s, after Jimmy Carter was elected president. Recipes are presented for onion muffuletta sandwich, scrambled eggs with onions and smoked salmon, onion rings, and grilled-onion salad.
