Many of the dishes call for grape seed oil. Its advantage is in being able to reach a high temperature without smoking. Some of the recipes presented are poached swordfish with oven-dried tomatoes and roasted eggplant and black olives, and smoked catfish with apple fennel salad and picked onions.
