Developing university courses on the global dimensions of human malnutrition
Article Abstract:
Nutrition educators stress the importance of developing courses on human malnutrition to promote awareness of the global problem of nutrition deficiency. The teaching of human malnutrition should be supported with audio-visual tools, UN reports and guest speakers to enhance relevance and credibility. Educators should also relate the efforts and accomplishments of humanitarian organizations and maintain an upbeat teaching pace to keep students from being overwhelmed by the suffering caused by malnutrition.

Using a critical incident technique to develop nutrition information materials for adults with low literacy skills
Article Abstract:
The usefulness of the Critical Incident Technique in developing nutrition materials for adults with low literacy skills is examined using a nutrition booklet developed by interviewing adults aged 18-60. Results indicate the technique's value in testing the effectiveness of various informational materials. However, its application in the educational material development should be further investigated.
