Social cognitive model of fruit and vegetable consumption in elementary school children
Article Abstract:
Research was conducted to examine a social cognitive model of fruit and vegetable (F and V) consumption in elementary school children. The model, which was based on nutrition education literature and on Social Cognitive Theory, was assessed using structural equation modeling methods. A sample of 414 third-graders were tested according to five predictors that included motivation, availability, modeling, knowledge and nutrition education. Results suggest that outcome expectancies, perceived self-efficacy and preferences are important determinants of F and V consumption in children.

Nutrition education for cancer prevention among low-income populations: an extension of the EFNEP model
Article Abstract:
Research was conducted to examine the feasibility of implementing an extension of the Expanded Food and Nutrition Education Program (EFNEP) home-based nutrition education intervention to aid in the dissemination of nutrition messages and to provide support for healthy behavior change. Three EFNEP paraprofessionals helped to recruit four community residents to act as party hostesses and to invite at least six family members and friends to attend two sessions. Results indicate the feasibility of using home-based interventions with social networks.
