Vietnam has been able to preserve its ancient past despite living through centuries of foreign occupation. The intermingling of the country's traditions and increasing modernity is reflected in its tasty and colorful dishes. Restaurants in Hanoi and Ho Chi Minh City are discussed.

It is necessary to prepare all meat and vegetables prior to beginning to grill, as cooking time is fast. Recipes are given for grilled steak with shitake mushrooms and garlic, grilled swordfish with coriander sauce, grilled chicken with bell peppers and snow peas and more.

Fried rice: a meal in a bowl

Fried rice can be prepared in a variety of ways, usually using leftovers from yesterday's lunch or dinner. Cooked meats, seafoods and vegetables can be mixed with the rice or improvised to include sweet potatoes or winter squash. Recipes of fried rice are presented.
