The popular street food of Xian, the capital of Shaanxi province, one of China's most historic cities, reflects the location and its history. While shao bing, noodles and dumplings, are some of the dishes popular in Xian, the most enjoyed Xian street snack remains yang rou pao mo, a heart mutton soup dense with small pieces of soaked flatbread.
