Several outdoor menus and recipes that are readily made and convenient to carry are are presented. Sandwiches and chicken are the two most recommended dishes for picnics. Among the menus and recipes listed are "A Bird in the Hand," "Green-Pepper Slaw," and "Pan Bagnat."

Americans have a great penchant for different kinds of mushrooms because of their flavor and low calorie content. Mushrooms such as shiitake, crimini and porcini can both be used as garnish and main course. Recipes for mushroom dishes are presented.
