Winter vegetable gardening is possible if certain steps are followed. The plants must be able to withstand cold climate. They must have reached 90% of their maturity before winter sets in. Both row cover for the soil and polyethylene sheeting are needed for protection.

Better beans

Fast-growing snap beans are a good crop for late planting. They need well-drained soil in full sun that is watered before planting. Bean innoculant aids the nitrogen-fixing process. Covering the plants with plastic or fabric will protect them from frost.

Super scallions!

Scallions are also known as green, Japanese, bunching or spring onions. In Mandarin Chinese, they are called 'qing cong.' Their small size is achieved by harvesting them from 'very' young regular onions. Growing tips are provided.
