French restaurants have been going through a period of crisis since the 1970s. Social changes mean that many young people are no longer aware of how good food should really taste, and the increasing internationalization of cooking has meant that the divisions between France's regional styles of cooking have become blurred. However, there is now a trend towards modern French cooking which is both traditional and innovative. It links the presentation and lightness of nouvelle cuisine with the simple traditional dishes of France's regions.

The cafe has for many years played a key role in society in Paris, France. Parisians are very careful to select their favourite cafes according to their social circle, and are very aware of which cafes are fashionable.
