Mrs Linda Riley bakes cakes at home in the Home Counties, England for craft-centre cafes, historic houses and coffee shops, but the environmental health department say her kitchen does not meet requirements in the Food Safey Act of February 1992. In 1990 the Rileys spent 8,000 pounds sterling on a new kitchen designed to meet Department of Health and local authority regulations. In June 1992 an environmental health inspector gave Mrs Riley a list of instructions requiring three sinks and costing a further 3,000 pounds sterling.

The results of a recent survey into the consumption of 'ethnic' food indicate that 48% of Britons have not eaten such food from restaurants or takeaways in the last year. It is hard to establish where this indicates a lack of cultural diversity, just as it is also hard to produce a satisfactory definition of 'ethnic' food. The key issue is not what people eat, but whether they can actually afford to eat out and whether the food they eat is safe and nutritious.

The current crisis over BSE in British cattle has prompted strong demand for organic beef. However, organic producers account for less than 1% of the market, and cannot possible meet demand. Consumers concerned about the danger of BSE should turn to a specialist butcher shop, where staff can advise on which meat comes from herds which have not been affected by BSE. Only with this approach will consumer confidence in beef been restored.
