Casseroles using grains and vegetables provide a much healthier alternative to beef stews. Grains such as bulgur, kasha, wild rice and quinoa also have great nutritional value. Included are recipes for quinoa pilaf, bulgur florentine, wild rice and acorn squash, and kasha with mushrooms.
