Article Abstract:
Data from NPG Group Canada's Consumer Report on Eating Share Trends indicate that total hot beverages purchased in a foodservice environment rose by 7% while total cold beverage sales went up by 5% for the 12 months ending May 2000. Regular coffee remains as the beverage of choice of most Canadian restaurant diners, followed by soft drinks. However, coffee increased its market share to 26% but soft drinks has seen its market share decline to 17%.

The largest class of growing infectious diseases in Canada is food poisoning. There are over 200 known diseases that are transmitted through food. The food safety report outlines the three dimensions to food safety: Dodge, Delay and Destroy. Harmful micro-organisms are to be Dodged, growth of these organisms are to be Delayed and those organisms that remain should be Destroyed.
