New food trends have emerged in the Canadian foodservice industry in 2007, the biggest of which is healthy eating. Other big trends include wider varities of menu choices, upscaling, convenience and speed of service, sustainability and local sourcing and high-end pork. The rise of these trends in the foodservice landscape is discussed.
