Chef Alain Passard of the famous L'Arpege of Paris, France, makes dishes that do not contain meat, only fish and vegetables. He enjoys the creative opportunity that cooking primarily with vegetables provides, and changed the menu because meat consumption is off almost 50% in France because of the increasing number of cases of mad-cow disease.
