Predicting percentage of retail yield from carcass measurements, the yield grading equation, and closely trimmed, boxed beef weights
Article Abstract:
The effects of fat cover, hot carcass weight, longissimus muscle area, sex class and round yields on the US Department of Agriculture (USDA) retail yield equation were examined. The retail yield equation was formulated in 1965, when cattle had more fat than present cattle of European breeding. Data was collected from 64 steers, 24 bulls and 12 heifers slaughtered and fabricated into closely trimmed boxed beef which were sent for analysis of percentage of retail yield at the Meat Laboratory of the Iowa State University. The results showed that the current USDA retail yield equation is adequate.
