Characterization of a cell envelope-associated protienase activity from Streptococcus thermophilus H-strains
Article Abstract:
A comparison of the production and biochemical properties of cell envelope- associated protienases of Streptococcus thermophilus CNRZ 385 and CNRZ 703 obtained from purified cell wall fractions is discussed. Crystalline bovine serum albumin were used as the standard for estimating the proteins which were subjected to sodium dodecyl sulfate-polyacrylamide gel electrophoresis analysis. It was found that the overall proteinase activity of strain CNRZ 703 was affected by the presence of an available nitrogen source while the other strain was not.

Structural characterization of the exocellular polysaccharides produced by Streptococcus thermophilus SFi39 and SFi12
Article Abstract:
Microbiological research has established the structural characteristics of exopolysaccharides SFi39 adn SFi12 produced by the organism Streptococcus thermophilus. SFi39 has a one to one D-glucose, D-galactose molar ratio. SFi12 has a three to two to one D-galactose, L-rhamnose and D-glucose molar ratio. The tetrasaccharide repeating unit chemical structure of SFi39 is shown. The hexasaccharide repeating unit chemical structure of SFi12 is shown. The texturing properties of S. thermophilus are discussed.

Branched-chain amino acid biosynthesis is esential for optimal growth of Streptococcus thermophilus in milk
Article Abstract:
Streptococcus thermophilus can synthesize branched-chain amino acids, which is unusual in lactic acid bacteria. This could be an adaptation to growing in milk, which is not a substantial source of amino acids.
