Global transcriptional and physiological response of Saccharomyces cerevisiae to ammonium, L-alanine or L-glutamine limitation
Article Abstract:
Global transcriptional regulation of nitrogen and metabolism is studied by growing Saccharomyces cerevisiae in chemostat culture with L-ammonium, L-alanine or L-glutamine in limitation and by growing cells in an excess of ammonium. The results reveal that the nitrogen sources has substantial influence on the transcriptome of yeasts and that transcriptional changes may be corrected to physiology via metabolic model.

Genotypic and physiological characterization of Saccharomyces boulardii, the probiotic strain of Saccharomyces cerevisiae
Article Abstract:
The distinguishing molecular and phenotypic characteristics, including enhanced ability for pseudohyphal switching upon nitrogen limitation, of Saccharomyces boulardii has made it to perform more effectively as a probiotic organism when compared to other strains of Saccharomyces cerevisiae. The impact of the different genotypic and phenotypic features of Saccharomyces boulardii on its probiotic nature is described.

A study conducted demonstrate that thioredoxin, an antioxidant protein useful for protecting gastric mucosa and reducing the allergenicity of allergens, could be extracted from Saccharomyces cerevisiae yeast cell with 20% ethanol.
