Production of pediocin AcH by Lactobacillus plantarum WHE 92 isolated from cheese
Article Abstract:
The pediocin produced by Lactobacillus plantarum WHE 92 isolated from a soft cheese, is a 4.6-kDa, 44-amino-acid peptide. The bacteriocin's primary structure is identical to that of pediocin AcH produced by different Pediococcus acidilactici strains. The production of pediocin AcH from L. plantarum is unaffected even when the pH of the medium is 6.0. Since the pH of dairy products is often higher than 5.0, L. plantarum WHE 92 can be used to combat cheese contamination by Listeria monocytogenes.

Research has been conducted on lactic acid bacteria. The authors have investigated the auxotrophies found in Lactobacillus plantarum and L. plantarum-related strains and the molecular basis of Lactobacillus auxotrophy in arginine and pyrimidine biosynthetic pathways, and have described the gene mutations responsible for L. plantarum arginine auxotrophy.

Research has been conducted on priming glycosyltransferase gene in Lactobacillus casei strains. The authors describe the use of consensus-degenerate hybrid oligonucleotide primer strategy for amplification of related sequences developed for detection of this gene.
