Majority of European markets, namely France, Italy, the United Kingdom, and Germany, registered modest growth in consumer catering for the period of 1991 to 1995. Italy recorded the highest percentage growth change of 19.4% in consumer catering market with $51.47 billion in 1991 to $61.43 billion in 1995. Spain, on the other hand, experienced a negative growth of 12.4% at $2.58 billion to $2.26 billion for the fiscal year of 1991 and 1995, respectively. Modest to strong growth is expected in Spain, France, and UK while Germany is forecasted to have a market decline. Italy, on the other hand, is expected to experience minimal growth.

The consumer catering retail markets in France, Italy, the United Kingdom, Germany, and Spain are expecting moderate real value growth rates. Because of the firm competition in these five key markets, the growth rates will vary from UK's just below 8% and Spain and France's identical 3%. The Italian consumer catering market will diversify into cafes and bars, while UK's growth will be supported by economic affluence and busier lifestyles. In contrast, the prevailing economic uncertainty and high spending levels in Germany will result in a decline in real value growth.

Catering business in European economies generally followed a downward trend from 1989-1993 due to the recession, inflation and economic restructuring. Despite large increases in the prices for catering, sales declines from $43 billion in 1989 to $11 billion in 1993. The Russian Federation posted the biggest turnover, followed by the Czech Republic and Hungary. Catering in cafes and snack bars accounted for 57% of consumer catering sales, while the fast food sector contributed 5% to the overall sales volume.
