The UK contract catering industry saw its turnover rise 9% in 1994 from 1993 to 2.18 billion pounds sterling. Caterers are benefiting from moving into non-traditional areas, such as the leisure industry. There will be new opportunities to expand into the public sector, especially as many organisations decide to focus on their core operations, bringing in food service management companies to deal with catering work. Contract catering companies now operate 14,914 outlets, with the value of purchases reaching 1,013 million pounds sterling in 1994.
