Article Abstract:
Chinese cuisine did not fare well in mainland China under communism, but persisted among the Chinese diaspora. Traditions were maintained in Taiwan, while experiments were carried out in Hong Kong, with stronger internetional links. Hong Kong cuisine is affected by a trend toward healthier eating with less heavy meat, more vegetables, less salt and sugar, and an end to the usage of monosodium glumatate. While gastronomes complain about the quality of cooking outside the mainland, due to the job of chef having become relatively less attractive, Chinese cuisine is undergoing a revival in mainland China.

Restaurants in central London, UK, are struggling, but restaurants in less fashionable, residential areas are buoyant. The fall in tourists from the US has hit central London, while many workers now choose not to stay in central London after the working day ends.
