The UK sandwich industry expanded by 45% between 1992 and 1997 at current prices, according to Mintel. Sandwiches account for 41% of the fast-food market, with demand rising as more and more people seek easy, portable food. The largest selling brand of sandwiches is Marks & Spencer, with other leading players including Sainsbury, Boots and Tesco. The sandwich industry is becoming increasingly competitive, and many small sandwich businesses are being forced to diversify in order to retain and increase their market share.

The UK market for sandwiches reached a value of 1.9 billion pounds sterling in 1995, with sales of 1.3 billion units. Around 600 companies produce sandwiches, and sales are made through more than 8,000 retail outlets. The market has thrived as people take shorter lunches during working hours and meal times become more informal. Standard varieties such as prawn mayonnaise, egg mayonnaise and ham and cheese account for 80% of sales, with exotics taking 20%.
