The UK market for pickles, relishes and sauces was worth 481 million pounds sterling in 1993, up 6% from 1992, with volume totalling 291.6 million t. Domestic production totalled 376,900 t in 1992, with imports reaching 90,900 t. The largest sector of the market is thick sauces, worth 135.1 million pounds sterling in 1993 and with a 28% market share. Within the sector, tomato sauce is the largest segment. Other dominant markets are relish/pickles/chutneys, with 25.6% of the market, and dressings, with a 21.4% market share. Sales in most sectors are forecast to grow.
