The Italian market for consumer catering
Article Abstract:
A review of the Italian consumer catering market from 1991-1995 shows a 3.2% growth in nominal terms in 1995 to L61,425 billion. In value terms, restaurants/cafeterias were the most important sector gaining 61% of market revenues in 1995 followed by bars with 24%. Retail catering, however, dominated the grwoth in value terms with 125% from 1991-1995, while leisure outlets experienced the most decline of 5% during the same period. The Italian consumer market is expected to experience a 3% decline in real terms to some L59,591 in the year 2000.

Europe's consumer catering industry is led by a number of indigenous companies with significant shares of the market, in addition to the established chains from the US. Autogrill and TelePizza, two home-grown operators, represent leading shares in national consumer catering markets in Italy and Spain, respectively. The entire consumer catering industry was characterized by consolidation in the 1993 to 1997 period, with numerous merger and procurements and leading firms shifting their strategic focus.

The Spanish consumer catering market
Article Abstract:
A number of trends have been observed in the Spanish restaurant industry. The market grew by 7.5% to reach a value of 2,264 billion pesetas in 1995. Restaurants had the largest share of the market accounting for 35% of total revenues while fast foods experienced the largest growth. Quality has also become the most important concern of the industry with many firms attempting to gain ISO 9002 certification.
