The market is dominated by chicken products, accounting for 80% by value and 75% by volume. Second largest sector is turkey, with a 20% volume share and a 17% value share, with the remainder accounted for by other poultry, mainly ducks and geese. The largest UK supplier of poultry products is Hillsdown Holdings PLC's European Poultry Division. The UK poultry market is expected to be reach 2.07 billion pounds sterling by 1999.

Poultry is perceived as more healthier than red meats, with fresh chicken preferred over frozen because of its taste and healthier image.
