Cilantro has become a mainstay in the Mexican cuisine because it balances out the extreme spiciness of most of the dishes of the country. It possesses a peppery odor and a distinct, lemony flavor that, aside from cooling the spicy aspect of Mexican food, also brings out the taste of tomatoes, lemons and garlic.
