Cultural diversity: eating in America
Article Abstract:
The Ohio State University Extension developed information sheets regarding the different nutritional attitudes of ethnic groups in northeastern Ohio. The project aims to alleviate problems encountered by nutrition teachers and health personnel when holding nutrition seminars among these groups. They have observed that lack of awareness on cultural beliefs and practices concerning food hinders hinders them from effectively communicating with the people. The information sheets were assessed by nutritionists across the country and were given high ratings for relevance and organization.

Tools to simplify and demonstrate the new food label
Article Abstract:
The new and more user friendly nutrition labeling format is designed to help consumers choose more nutritious food products. Unfortunately, many label readers do not understand the nutrition information provided. Several teaching tools to simplify and demonstrate label concepts have been developed to resolve the problem. The tools include hand-held flip charts that explain the Percent Daily Value concept as well as T-shirts, aprons and canvas bags imprinted with the Nutrition Facts panel.
