Three light menus suited for spring are presented. The recipes include seared scallops with tarragon cream, spring peas with lettuce and mint, new-style old-fashioned chocolate pudding, peppered beef slices with green onions and radishes and lemon cake roll.

Five low-fat dinner recipes that are suited for outdoor trips are presented. The recipes, which include Creamy Oregano Dip with Vegetables, New Potato Salad with Sauteed Onion Vinaigrette and Apricot-Cherry Shortcakes, are light and easy to prepare.
