A cut above the rest

Only 3 knives are necessary in the kitchen; a chef's knife, paring knife, and bread knife. Those knives should be the best quality one can afford, and should be regularly realigned with a sharpening steel. High-carbon stainless steel is the material to look for, because it holds its edge and resists stains. Forged knives are better than stamped knives when it comes to heavy knives such as the chef's, but stamped is fine for paring knives.

Curried chickpeas, stuffed portobello mushrooms, broccoli-tofu stir fry, grilled vegetable sandwiches, spinach-walnut manicotti, and pesto-bean pizza are the recipes featured.
