Fat substitutes made from gums, polydextrose and modified food starch have been approved by the Food and Drug Administration and are on the market. Use of substitutes can help cut fat to the recommended 30% of caloric intake, but their acceptance by consumers is an unanswered question.

Trans fat: another artery-clogger?

Some studies indicate that trans fatty acids, which are found in margarine and in many processed and fast foods, are just as harmful as saturated fat. Experts recommend avoiding both trans fat and saturated fat as well as limiting total fat consumption.
