Restaurant operators should pay attention to the trends affecting the industry to be successful in the new millennium. While there is no single trend that will determine foodservice business in the future, industry observers suggest a number of trends that will have an impact on the industry. These include demographic issues, particularly those that will affect baby boomers; technological opportunities, such as those offered by electronic commerce; and challenges brought about by labor shortage.
