FRANCE: THE FROZEN FOOD MARKET IN AUGUST 1998

On the French frozen food market, ice cream represented FFr 4.491bn for the twelve months ending 9 August 1998, calculated monthly, up 9.5%, while desserts and frozen dough represented FFr 342mn, up 1%. With desserts and ice cream excluded, the frozen food products represented FFr 14.697bn, but varied according to segments. Continuing to drop for the twelve months ending 9 August 1998, calculated monthly, were sauces and herbs, down 2.5%; vegetables, down 4.8%; entrees, down 3.6%; and fish and shellfish, down 1.2%. However, during this period, ready meals represented FFr 3.198bn, up 3.8%; meat represented 1.409bn, up 3.9%; and potatoes represented FFr 1.437bn, up 5.6%. Frozen food products will have to cope with two difficulties: a market which is becoming increasingly commonplace, and stiffer competition from the refrigerated ready meal sector. Innovation and bringing processed products more upscale appears to be the key to stimulating this market.

Yule logs showed a certain vitality on the Christmas ice cream desserts market, with a 6.4% rise in value despite a 2.6% drop in volume. The rise in value indicates consumer preference for major brand products, price higher than the lowest-priced or regional Yule log products. Standard flavours (caramel-pineapple, rum-raisin, and coconut-chocolate) continue to sell well Yule log segment. According to studies, the recipe is consumers leading criteria for purchase, followed by the brand and presentation and packaging. Yule log sales are concentrated in the last two weeks of December - 40% before Christmas, 20% between Christmas and New Year's Day. Miko and Nestl Gervais lead the Yule log market, each with around a 16% volume market share, followed by Pilpa with nearly a 12% volume market share.

Although the French chilled dessert market appears to be sluggish with 313,728 tonnes, down 0.6%, it represented FFr 5.57bn in 1997, up 3.3%, at the end of 1997, compared with FFr 23.5bn, up 2.2%, for 1.634mn tonnes for total chilled dairy products, up 0.8%. The major market trend appears to be variety and diversity of the selection and the originality of the recipes. Manufacturers also appear to be concerned about refining and improving existing recipes.
