Oven-bag cooking

Using oven bags for roasting is better than lining the pan with foil. They make cooking more convenient because the food can be stuffed into the bag the night before, kept in the refrigerator overnight and placed in the oven the next day. They also make cleanups easier. Recipes are presented.

Pressure-cooking

Pressure cookers accelerates cooking and reduce the amount of oil needed to cook food. They can be used with almost any food, but is particularly helpful for dishes that usually take a long time to cook, such as braised meat, stews and sauces. Pressure-cooking gumbo is demonstrated.

Stir-fry cooking is a good way of recycling leftover foods which are often flavorless and textureless. To preserve both their flavor and texture, they should be cooked at high heat and should be kept moving in the pan.
