Technological developments have extended the range of catering equipment applicable to the leisure industry enabling high-speed small batch catering instead of bulk cooking and reheating. Pressureless steamers provide fast low-energy cooking. The combi microwave provides fast-cooked browned food. The combi wave oven incorporates microwaves, convection and steam. Specialist equipment developed to meet fast-food requirements includes high-speed pizza ovens and electric woks.

Sound standards
Article Abstract:
Leisure operators should ensure sound systems comply with British Standards (BS) despite lack of technical specification in statutory requirements. BS 7443 specifies quality through a Speech Transmission Index. BS 5839 'Fire Detection and Alarm Systems for Buildings' is also relevant to announcement systems. A sound industry code of practice developed in response to stadia emergencies is likely to become a BS. The code emphasises the need for operator training.
