Nutrition education materials for pregnant teens
Article Abstract:
Printed educational materials were developed by nutrition educators at the North Carolina Cooperative Extension Service and the East Carolina University School Medicine to address nutritional problems frequently encountered by pregnant teenagers and their babies. They are at high risk of nutritional deficiencies, low birth weight neonates and inadequate weight gain that could sustain them throughout their childbearing. However, the printed brochures served as effective tools in disseminating and influencing their attitudes toward food and the right food choices.

Community Nutritional Problems Among Latino Children in Hartford, Connecticut
Article Abstract:
The University of Connecticut Family Nutrition Program's report 'Community Nutritional Problems Among Latino Children in Hartford, Connecticut' summarizes the outcome of a food and nutrition study conducted among 248 low-income Latino families. The 52-page report also tackles other nutrition issues, such as breastfeeding rates and practices as well as obesity and food security. The results were presented in graphical form for enhanced readability.

Teaching nutrition and food skills with easy-to-read recipes
Article Abstract:
Members of the Expanded Food and Nutrition Education Program launched a project in 1994 aimed at developing a set of 50 recipe cards to encourage healthy eating for low-income families with children. Recipes were selected based on the cost of ingredients, required appliances and simplicity. The final set called 'Simply Good Eating' contained 44 recipe cards which covered everything from main dishes to breads to children's snacks.
